Monkfish Satay Skewers

kfish Satay Skewers

Ingredients (x 4 Skewers)
– 480g Monkfish Fillet-Trimmed & skewerd
– 1 tsp Olive Oil
– 2tbls Grated Ginger
– 1 Lime-Zest Only
– 2 Cloves garlic-Grated
– 1tbls Thai Fish Sauce

Peanut Sauce
– 1tsp. Sunflower Oil
– 4 Garlic Cloves-crushed
– 3 Chillies, Finely Chopped
– 2 tbls palm sugar- ground
– 2 tbls Thai Fish Sauce
– 4 tbls Peanut butter
– 250mls Coconut Milk
– 2 Limes- Juice Only

Limes for Squeezing


Prepare a BBQ for grilling

To prepare the marinade, mix together the olive oil, ginger, lime, garlic & fish sauce-rub into fish

Marinade the monkfish for 2 hours minimum

To make the Satay- blend together all the ingredients in a food processor. Check the seasoning

Cook the Monkfish skewers over Hot Coals for 4 minutes either side

Finish with a squeeze of Lime Juice

Dress with the sauce & serve
